Tsoureki Birthday Cake

Our take on tsoureki birthday cake. ❤️ It’s our papu’s birthday and we decided to make his favorite tsoureki loaf in the shape of a birthday cake! 👨‍👩‍👦 Give it a try and let us know how it turns out for you.

Tender and fluffy dough topped with luscious  orange glaze stole our papu’s heart.

It’s easy to make, just reserve some time for proofing the dough.

To activate yeast:

10g dry yeast

50ml milk

25g raw sugar

20g flour

Ingredients for the cake:

500g flour, sifted

60ml milk, room t°

2g salt

7g mahleb powder

3 drops orange oil

100g butter, softened

75g raw sugar

100ml water

2 eggs, room t°

150g cottage cheese, room t°

150g raisins, soaked

Orange glaze:

96g powdered sugar

120ml heavy cream

5 drops of orange oil

Lemon zest for decoration

Instructions:

1. In the bowl of a mixer dissolve the yeast in warm milk (30-40°C), add the sugar and flour. Whisk thoroughly and let rest covered for 15 min to activate the yeast until the mixture gets bubbly.

2. For the dough, warm the milk until 40°C. Blend the cottage cheese with the water until smooth.

3. To the mixer bowl with the yeast mix, add the sifted flour, warm milk, sugar, salt, mahleb powder, orange essence, softened butter, 2 eggs and the cottage cheese blend.

4. Beat with the hook attachment for 10-15min until smooth. Fold in the raisins. Let raise covered for 1 hour until double in size.

5 . Pour the batter into the baking form. It should reach only until half of it. Cover and let raise until double in size, aprox 1h.

6. Bake at 180°С for about 40-50 minutes, until a toothpick comes out clean.

7. Remove from the oven and let cool.

8. For the glaze: in a saucepan cook the heavy cream with the powdered sugar until the sugar dissolves completely. Add in the lemon juice and cook for 5 min constantly mixing until the glaze thickens. Let the glaze rest for 5-7 minutes.

9. Pour the glaze over the cake and let set in the fridge for about 20 min.
