Ingredients

Dough

  • 225ml milk

  • 15ml lemon juice

  • 135g white sugar

  • 14g active dry yeast

  • 115g butter, room t°

  • 2 large eggs, room t°

  • 1/2 teaspoon salt

  • 575g all-purpose flour

Filling

  • 90g butter, room t°

  • 100g brown sugar

  • 15g ground cinnamon

Cream Cheese Frosting

  • 150g full-fat cream cheese, room t°

  • 70g butter, room t°

  • 200g sifted confectioners’ sugar

  • 15ml vanilla extract

Instructions👇👇👇

Step 1: the dough

  1. Add the lemon juice to the milk and let sit for 5 min.

  2. In a microwave, warm the milk until warm, aprox. 35°C. Pour the warm milk into the bowl of a mixer fitted with the dough hook attachment. Manually stir in the sugar and yeast. Cover with a towel and let sit until the yeast is foamy, aprox. 5 minutes.

  3. On low speed, beat in the butter until it is slightly broken up.

  4. Mix in the eggs, and then the salt.

  5. On low speed, gradually add the flour. Once it is all added, beat on medium speed until a soft dough forms. Increase speed to medium-high and beat until the dough is soft and supple, about 5 minutes longer.

  6. Transfer the dough to a lightly floured surface and knead it with your hands for 1 minute. Form the dough into a ball and transfer it to a lightly greased bowl. Loosely cover the dough and allow it to rise for 1-2 hours until double in size.

  7. Grease an aprox 20x30cm baking dish. Turn the dough out onto a lightly floured work surface and, using a rolling pin, roll into a rectangle, aprox 35x40. Make sure the dough is smooth and evenly thick, even at the corners.

Step 2: the filling

  1. Spread the softened butter all over the dough.

  2. In a small bowl, toss the cinnamon and sugar together until combined and then sprinkle evenly over the dough.

  3. Tightly roll up the dough to form a log. If some filling spills out, that’s ok just sprinkle it on top of the rolls. Cut into 8 large rolls.  Arrange them in the prepared baking pan. Cover the rolls very tightly with plastic wrap and allow to rise until the rolls are doubled in size, about 2 hours. OR stick in the refrigerator for 8-12 hours.

  4. If the rolls rose overnight in the fridge, remove rolls from the refrigerator and let rise in a warm place until they are puffy, about 1-2 hours.

  5. After the rolls have risen, preheat the oven to 190°C. Bake for about 25 minutes or until they are golden brown on top. Remove pan from the oven and allow to cool for about 10 minutes as you make the frosting.

Step 3: the frosting

  1. Beat the cream cheese and butter together on high speed until smooth and creamy.

  2. Add the confectioners’ sugar and vanilla. Beat until glossy.

  3. Spread the frosting over the warm rolls and enjoy!

  4. Let us know how they turn out for you!❤️
