Rocky Road Brownies

We were craving Fudgy brownies with a crunchy touch for so long, and finally we got them! 🤩

The brownie is super chocolaty and fudgy while the topping create an array of textures: chunchy rice puffs, chewy marshmallows, crispy M&Ms and a tad sour raspberries❤️.

Here are the simple steps to get these Rocky Road Brownies ready in little time! ✅

🩷 Ingredients:

  • 130g dark chocolate chips

  • 130g butter, room t°

  • 150g brown sugar

  • 150g white sugar

  • 3 eggs L, room t°

  • 4ml vanilla essence

  • 135g flour

  • 18g cocoa powder

  • 5g baking powder

  • 5g salt

Toppings:

  • Crispy rice chocolate chunks

  • Marshmallows

  • M&Ms

  • Raspberries

Instructions:

  1. Melt chocolate and butter in 20 sec bursts in a microwave, stirring well after each burst until melted.

  2. Add the sugars in the warm chocolate mixture and stir to combine.

  3. Mix the eggs with vanilla and beat into the batter with a mixer.

  4. In a separate bowl, sift together the flour, cocoa and baking powders. Whisk in the salt.

  5. Add the dry ingredients to the batter and mix until the dough comes together but still looks shaggy. Do not overmix.

  6. Bake at 180° for 22-25min rotating halfway through until a thin crust appears on the top and a toothpick inserted into the center draws out wet crumbs.

  7. Top with rice crispy chocolate chunks and marshmallows and return to the oven for 2 min only to let marshmallows toast a bit.

  8. Remove. Let cool and enjoy! 💖
