Lotus Biscoff Berries Cookies

Is it us or the creaminess of Lotus Biscoff is the most delicious when paired with a tad sour berry jam? 🫶

These Lotus Biscoff Berry Cookies are soft and creamy packed with Lotus Biscoff cream, with a crunch of Lotus Biscoff Cookies and a tad sour berry flavor. 💕

They come together easily with only a handful of ingredients. All they need is some chilling time and the most delectable cookies are ready to enjoy. 🤫

We baked them for our son’s birthday party and they became a crowd favorite at first bite 🤗

Ingredients:

  • 140g butter room t°

  • 100 brown sugar

  • 50g white sugar

  • 1 egg, room t°

  • 135 g Lotus Biscoff spread

  • 1 tsp vanilla extract

  • 210g all-purpose flour

  • 1 tsp salt

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 100g white chocolate chips

  • 90g Biscoff cookie chunks chopped

  • 50g berry jam

Decoration:

  • Lotus Biscoff cookies

  • Lotus Biscoff spread

  • Berry jam

Instructions:

  • Beat the butter with the sugar for a few minutes until creamy.

  • Beat in the egg and vanilla extract. Follow with the Lotus Biscoff spread.

  • Sift in the flour, salt, baking soda and cinnamon.

  • Fold in chocolate chips and Lotus Biscoff cookie chunks.

  • Swirl in the berry jam.

  • Divide the dough into 16 balls. Freeze for 30min.

  • Pre-heat oven to 200°C

  • Bake for 13 min then top with a spoon of berry jam, lotus Biscoff spread, and some larger biscoff cookie chunks on top, then bake them for further 8 minutes.
