Pistachio Ruby Chocolate Cookies

It's Sunday, and time for our Weekly Cookie Recipe ✅ Today, we're sharing a 10-minute, No-Bake Pistachio Ruby Chocolate Cookies that are a hit with both kids and adults.

This cookie recipe holds a special place in our hearts. Our 4-year-old son adores ruby chocolate, and we wanted to create something that not only satisfies his sweet tooth but is also nourishing.

Pistachios offer a good amount of protein, fiber, and antioxidants. Coconut adds a dose of essential fatty acids, and ruby chocolate brings a unique berry flavor along with additional antioxidants. Sweetened with just maple syrup and containing no added sugar, these cookies are as health-conscious as they are delicious.

With 7 straightforward ingredients, you can put together this family-friendly snack in no time.

Ingredients:

• 125 whole pistachios, ground into a "flour-like" consistency

• 40g coconut flour

• 30ml coconut oil, melted

• 15ml coconut milk, room temperature

• 30ml maple syrup, room temperature

• 10ml vanilla extract

• 60g ruby chocolate chips + more for decoration

Instructions:

1. Combine ground pistachios, coconut flour, and 60g ruby chocolate chips in a bowl.

2. Add in the melted coconut oil, coconut milk, maple syrup, and vanilla extract.

3. Shape the mixture into 9 individual cookies.

4. Refrigerate for 2-3 hours to set.

5. Optionally, melt some extra ruby chocolate to dip the cookies in before serving. Enjoy! ❤️
